A simple and delightful breakfast or brunch idea featuring eggs perfectly baked inside hollowed-out, golden-brown bread rolls. Quick to prepare and highly customizable.
Ingredients
- 4 medium bread rolls
- 4 large eggs
- 1 tablespoon melted butter
- Pinch salt
- Pinch black pepper
- 2 tablespoons shredded cheddar cheese optional
- 1 tablespoon fresh chives chopped
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Carefully hollow out the center of each bread roll, leaving a thick crust on the bottom and sides to form a 'boat.' Brush the inside and outside of the bread rolls with melted butter.
- Place the hollowed-out bread rolls on the prepared baking sheet. Bake for 8-10 minutes, or until the bread is lightly golden brown and slightly crispy. This helps prevent sogginess.
- Carefully crack one egg into the center of each partially baked bread boat. Season each egg with a pinch of salt and black pepper. If using, sprinkle a little shredded cheese around the egg.
- Return the baking sheet to the oven and bake for another 10-12 minutes, or until the egg whites are set and the yolks are still slightly runny (or cooked to your preference).
- Remove from the oven, garnish with fresh chives if desired, and serve immediately.
Notes
Use sturdy bread rolls like brioche, sourdough, or crusty dinner rolls. Don't discard the scooped-out bread; toast it for dipping or use for breadcrumbs. Feel free to add cooked crumbled bacon, shredded cheese, chopped chives, or a dash of hot sauce before or after baking for extra flavor.
