Ingredients
  

  • 1.5 lb boneless skinless chicken thighs
  • 2 cup broccoli florets
  • 1 cup chopped bell peppers any color
  • 1 small red onion sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  • In a large bowl, combine chicken pieces, broccoli florets, bell peppers, and red onion.
  • Drizzle with olive oil and sprinkle with garlic powder, paprika, oregano, salt, and pepper. Toss until all ingredients are well coated.
  • Spread the chicken and vegetables in a single layer on the prepared sheet pan.
  • Roast for 25-30 minutes, or until chicken is cooked through and vegetables are tender-crisp. Flip ingredients halfway through cooking for even browning.
  • Serve hot, optionally garnished with fresh parsley.

Notes

For even easier cleanup, line your sheet pan with parchment paper or a silicone baking mat. You can substitute chicken with sausage or firm tofu, and use any combination of your favorite sturdy vegetables like broccoli, bell peppers, or sweet potatoes.
