- 1.5 lb boneless skinless chicken thighs
- 2 cup broccoli florets
- 1 cup chopped bell peppers any color
- 1 small red onion sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 0.5 tsp dried oregano
- 0.25 tsp salt
- 0.125 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- In a large bowl, combine chicken pieces, broccoli florets, bell peppers, and red onion.
- Drizzle with olive oil and sprinkle with garlic powder, paprika, oregano, salt, and pepper. Toss until all ingredients are well coated.
- Spread the chicken and vegetables in a single layer on the prepared sheet pan.
