Ingredients
  

  • 1 pound boneless skinless chicken breast
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil

  • 1 head broccoli florets
  • 1 cup carrots sliced thinly
  • 1 red bell pepper sliced
  • 1 cup snap peas
  • 1/4 cup soy sauce (for sauce)
  • 1 tablespoon rice vinegar (for sauce)
  • 1 tablespoon honey (or brown sugar
  • 1 teaspoon sesame oil (for sauce)
  • 1/2 teaspoon red pepper flakes optional (for sauce)

Instructions
 

  • 1. **Marinate Chicken:** In a medium bowl, combine chicken pieces with 2 tablespoons soy sauce, 1 tablespoon cornstarch, and 1 tablespoon sesame oil. Mix well to coat the chicken and set aside for 10-15 minutes.
  • 2. **Prepare Sauce:** In a small bowl, whisk together the 1/4 cup soy sauce, rice vinegar, honey (or brown sugar), 1 teaspoon sesame oil, and red pepper flakes (if using). Set aside.
  • 3. **Cook Chicken:** Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook for 3-5 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
  • 4. **Stir-fry Aromatics & First Vegetables:** Add grated ginger and minced garlic to the skillet and stir-fry for 30 seconds until fragrant. Add broccoli florets and thinly sliced carrots. Stir-fry for 3 minutes.
  • 5. **Add Remaining Vegetables:** Add sliced red bell pepper and snap peas to the skillet. Continue to stir-fry for another 2-3 minutes, until the vegetables are tender-crisp.
  • 6. **Combine & Sauce:** Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over everything. Toss gently to coat all the ingredients and cook for 1-2 minutes, allowing the sauce to thicken slightly.
