Ingredients
- 1.5 lb boneless skinless chicken thighs or breast
- 2 medium potatoes peeled and diced into 1-inch cubes
- 1 tbsp sesame oil for stir-frying
- 0.5 cup water or chicken broth
- 3 tbsp soy sauce
- 1 tbsp honey or brown sugar
- 2 cloves garlic minced
- 0.5 tsp fresh ginger grated
- 0.25 tsp black pepper
- 0.5 tsp red chili flakes optional
- 2 tbsp fresh cilantro or green onions chopped
Instructions
- In a small bowl, combine soy sauce, honey, minced garlic, grated ginger, black pepper, and red chili flakes (if using). Mix evenly until well combined. This is your seasoning sauce.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and stir-fry for 3-5 minutes until lightly browned. Then, add the diced potatoes and continue to stir-fry for another 5-7 minutes, until potatoes start to soften and chicken is partially cooked.
- Pour in the prepared seasoning sauce and the water (or chicken broth). Bring to a simmer, then reduce heat to medium-low, cover, and let it cook for 10-15 minutes, or until potatoes are tender and the sauce has slightly thickened.
- Stir occasionally to prevent sticking. Serve hot, garnished with fresh cilantro or chopped green onions if desired, with steamed rice.
Notes
For extra vegetables, feel free to add sliced carrots, bell peppers, or green beans along with the potatoes. Adjust chili flakes to your preferred spice level, or omit for a milder dish. Serve with steamed rice or noodles.
