Easy Aldi Sheet Pan Chicken Dinner
A vibrant and healthy one-pan meal featuring tender chicken thighs and colorful vegetables, all seasoned to perfection and roasted to a crisp. This budget-friendly recipe uses everyday ingredients from Aldi, making weeknight dinners a breeze.
Ingredients
- 1.5 lb boneless skinless chicken thighs
- 2 cups broccoli florets
- 1 large red bell pepper sliced
- 1 medium red onion cut into wedges
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp salt or to taste
- 0.25 tsp black pepper or to taste
- (Optional) lemon wedges for serving
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the chicken thighs, broccoli florets, red bell pepper, and red onion.
- Drizzle with olive oil and sprinkle with paprika, garlic powder, onion powder, salt, and black pepper. Toss until all ingredients are evenly coated.
- Spread the mixture in a single layer on the prepared baking sheet. Ensure vegetables and chicken are not overcrowded for optimal roasting.
- Roast for 20-25 minutes, or until chicken is cooked through and vegetables are tender-crisp. Flip chicken and stir vegetables halfway through cooking for even browning.
- Remove from oven. Serve immediately, optionally garnished with fresh lemon wedges.
Notes
For extra flavor, squeeze fresh lemon juice over the cooked dish. You can swap vegetables based on what's in season or on sale at Aldi – green beans, carrots, or zucchini work well. Ensure vegetables are cut into similar-sized pieces for even cooking. Serve with a side of quinoa or rice if desired.
