Ingredients
  

  • 1.5 lb chicken breast boneless
  • 1 large bell pepper any color
  • 1 medium zucchini chopped
  • 0.5 medium red onion sliced
  • 1 cup cherry tomatoes halved
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp garlic powder
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper or to taste
  • 1 whole lemon for serving
  • 2 tbsp fresh parsley chopped

Instructions
 

  • In a large bowl, combine chicken, bell peppers, zucchini, red onion, and cherry tomatoes.
  • Drizzle with olive oil and sprinkle with oregano, thyme, garlic powder, salt, and pepper. Toss to coat everything evenly.
  • Preheat your air fryer to 375°F (190°C) for 5 minutes.
  • Place half of the chicken and vegetable mixture in a single layer in the air fryer basket. Do not overcrowd.
  • Cook for 10 minutes, then shake the basket and continue cooking for another 8-10 minutes, or until chicken is cooked through and vegetables are tender-crisp (internal temp of chicken should be 165°F/74°C).
  • Repeat with the remaining mixture if cooking in batches.
  • Serve immediately with a squeeze of fresh lemon juice and a sprinkle of fresh parsley.

Notes

For extra flavor, marinate the chicken and veggies for at least 30 minutes before air frying. Ensure not to overcrowd the air fryer basket; cook in batches if necessary to ensure even cooking and crispness. Serve with a sprinkle of feta cheese or a side of quinoa for a complete meal.
