Ingredients
- 1 tbsp olive oil
- 1 small onion chopped
- 2 cloves garlic minced
- 1 can (14.5 oz) diced tomatoes undrained
- 3 cups vegetable broth
- 8 oz short pasta like penne or rotini
- 2 cans (5 oz each) tuna in water
- 1/2 cup frozen peas
- 1/4 cup Parmesan cheese grated
- 2 tbsp fresh parsley chopped
- salt pepper to taste
Instructions
- Heat olive oil in a large skillet or pot with a lid over medium heat. Add chopped onion and cook until softened, about 3-5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in the undrained diced tomatoes, vegetable broth, and uncooked short pasta. Bring the mixture to a simmer, then reduce heat to medium-low. Cover the skillet and cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.
- Stir in the drained tuna and frozen peas. Continue to cook, uncovered, for another 2-3 minutes, until the peas are heated through and the sauce has thickened slightly.
- Remove the skillet from heat. Stir in the grated Parmesan cheese and fresh chopped parsley. Season with salt and pepper to taste.
