Ingredients
  

  • 1 loaf French baguette or ciabatta sliced 1/2-inch thick
  • 4 medium ripe tomatoes diced
  • 1/4 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 3 tbsp extra virgin olive oil plus more for brushing
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 ball fresh mozzarella cubed (optional)
  • 2 oz prosciutto thinly sliced (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Arrange bread slices on a baking sheet. Lightly brush each side with olive oil.
  • Bake for 8-10 minutes, or until golden brown and crisp. Remove from oven and let cool slightly.
  • In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, 3 tablespoons olive oil, balsamic vinegar, salt, and pepper. Mix well.
  • Arrange the toasted bread slices, tomato mixture, and any additional toppings (like mozzarella and prosciutto) on a large platter or separate bowls, allowing guests to assemble their own bruschetta.

Notes

Offer a variety of bread (baguette, ciabatta) and extra toppings like balsamic glaze, sun-dried tomatoes, pesto, different cheeses (feta, goat cheese), or cured meats (prosciutto). Toast bread just before serving for best results.
