Ingredients
- 1 loaf French baguette or ciabatta sliced 1/2-inch thick
- 4 medium ripe tomatoes diced
- 1/4 cup fresh basil leaves chopped
- 2 cloves garlic minced
- 3 tbsp extra virgin olive oil plus more for brushing
- 1 tbsp balsamic vinegar
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 ball fresh mozzarella cubed (optional)
- 2 oz prosciutto thinly sliced (optional)
Instructions
- Preheat oven to 375°F (190°C). Arrange bread slices on a baking sheet. Lightly brush each side with olive oil.
- Bake for 8-10 minutes, or until golden brown and crisp. Remove from oven and let cool slightly.
- In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, 3 tablespoons olive oil, balsamic vinegar, salt, and pepper. Mix well.
- Arrange the toasted bread slices, tomato mixture, and any additional toppings (like mozzarella and prosciutto) on a large platter or separate bowls, allowing guests to assemble their own bruschetta.
