Ingredients
  

  • 1.5 lb pork spare ribs cut into 1.5-inch pieces
  • 1 tbsp fermented black beans rinsed and roughly chopped
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 1 tbsp light soy sauce
  • 1 tsp Shaoxing wine optional
  • 0.5 tsp sesame oil
  • 0.5 tsp sugar
  • 1 tbsp cornstarch
  • 0.25 tsp white pepper
  • 0.5 tsp red chili flakes optional
  • 1 cup long-grain rice rinsed
  • 1.5 cups water
  • 2 stalks green onions chopped for garnish

Instructions
 

  • Rinse pork ribs thoroughly and pat dry. In a large bowl, combine the chopped fermented black beans, minced garlic, grated ginger, soy sauce, Shaoxing wine (if using), sesame oil, sugar, cornstarch, white pepper, and chili flakes (if using). Add the pork ribs to the marinade, ensuring each piece is well coated. Mix thoroughly and marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.
  • While the ribs are marinating, prepare the rice. Rinse 1 cup of long-grain rice until the water runs clear. Place the rinsed rice in a heatproof dish or bowl that fits inside your steamer. Add 1.5 cups of water to the rice.
  • Arrange the marinated pork ribs evenly over the top of the uncooked rice in the dish. This allows the flavorful juices from the ribs to drip down and infuse the rice as it cooks.
  • Prepare your steamer by filling the bottom with water and bringing it to a rolling boil. Carefully place the dish with the ribs and rice into the steamer. Cover tightly and steam for 25-30 minutes, or until the pork ribs are tender and the rice is fully cooked and fluffy. The cooking time may vary slightly depending on the thickness of the ribs and your steamer.
  • Carefully remove the dish from the steamer. Garnish with freshly chopped green onions before serving. Serve hot as a complete one-dish meal.

Notes

For best flavor, marinate the ribs for at least 1 hour, or even overnight in the refrigerator. Adjust chili flakes to your preferred spice level. You can also add a few pieces of taro or pumpkin cubes to the ribs before steaming for added flavor and texture. Serve immediately with a sprinkle of chopped green onions.
