Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup water room temperature
  • 0.5 teaspoon salt
  • 2 tablespoons vegetable oil divided
  • 4 large eggs beaten
  • 2 tablespoons green onions chopped
  • 2 tablespoons soy sauce for serving
  • 1 tablespoon chili sauce optional
  • 2 slices ham thinly sliced
  • 0.25 cup shredded cheese optional

Instructions
 

  • In a medium bowl, whisk together the all-purpose flour, water, and salt until a smooth batter forms. Set aside.
  • Heat 1 tablespoon of vegetable oil in a non-stick pan or skillet over medium heat. Once hot, pour about 1/4 cup of the batter into the pan, swirling to create a thin, even crepe. Cook for about 1-2 minutes until the edges are set and the surface starts to bubble.
  • Pour about half of the beaten egg mixture over the crepe, gently spreading it to cover the surface. Sprinkle with half of the chopped green onions. Cook for another 1-2 minutes until the egg is mostly set.
  • Carefully flip the crepe. If using, immediately place 1-2 slices of ham and a sprinkle of cheese on one half of the crepe. Cook for an additional minute, allowing the cheese to melt slightly.
  • Once the egg is cooked, carefully roll the crepe from one end to the other into a tight cylinder. Remove from the pan and slice into bite-sized pieces.
  • Repeat the process with the remaining oil, batter, egg, green onions, and fillings to make the second Dan Bing. Serve immediately with soy sauce and chili sauce, if desired.

Notes

For a crispier Dan Bing, use slightly less water in the batter or cook a bit longer. Serve with soy sauce, chili sauce, or a mix of both. Popular fillings include shredded cheese, ham, corn, or even tuna.
