Ingredients
- 1 lb ground beef or chicken lean
- 1 packet taco seasoning low sodium
- 1/2 cup water
- 2 cups cooked rice brown or white
- 1 can black beans rinsed and drained
- 1 cup corn fresh or frozen
- 1 cup lettuce shredded
- 1 cup cherry tomatoes halved
- 1/2 cup red onion diced
- 1 avocado diced
- 1/4 cup cilantro chopped
- salsa for serving
- sour cream or Greek yogurt for serving
Instructions
- In a large skillet, brown the ground beef or chicken over medium heat. Drain any excess fat.
- Add taco seasoning and water to the skillet. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens and meat is fully cooked.
- While meat cooks, prepare your base bowls with cooked rice.
- Top the rice with black beans, corn, and the seasoned meat.
- Arrange shredded lettuce, cherry tomatoes, diced red onion, avocado, and cilantro on top or around the meat.
