Ingredients
  

  • 1 lb ground beef or chicken lean
  • 1 packet taco seasoning low sodium
  • 1/2 cup water
  • 2 cups cooked rice brown or white
  • 1 can black beans rinsed and drained
  • 1 cup corn fresh or frozen
  • 1 cup lettuce shredded
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion diced
  • 1 avocado diced
  • 1/4 cup cilantro chopped
  • salsa for serving
  • sour cream or Greek yogurt for serving

Instructions
 

  • In a large skillet, brown the ground beef or chicken over medium heat. Drain any excess fat.
  • Add taco seasoning and water to the skillet. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens and meat is fully cooked.
  • While meat cooks, prepare your base bowls with cooked rice.
  • Top the rice with black beans, corn, and the seasoned meat.
  • Arrange shredded lettuce, cherry tomatoes, diced red onion, avocado, and cilantro on top or around the meat.
  • Serve with salsa, sour cream or Greek yogurt, and any other desired toppings. Enjoy your customized taco bowl!

Notes

For a healthier option, use lean ground turkey or chicken. Offer a variety of toppings like salsa, guacamole, sour cream, pickled jalapeños, and shredded cheese so everyone can customize their bowl. Leftovers can be stored separately and assembled fresh.
