Ingredients
- 1.5 pound small red or Yukon Gold potatoes
- 4 tablespoons unsalted butter melted
- 3 cloves garlic minced
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash potatoes thoroughly. Place them in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil and cook for 15-20 minutes, or until fork-tender but not falling apart.
- While potatoes cook, prepare the garlic Parmesan butter: In a small bowl, combine melted butter, minced garlic, grated Parmesan cheese, chopped fresh parsley, salt, and pepper. Mix well and set aside.
- Drain the cooked potatoes and let them cool for a few minutes. Place each potato on the prepared baking sheet. Using the bottom of a glass or a mug, gently smash each potato until it's about 1/2 inch thick.
- Drizzle olive oil lightly over each smashed potato. Then, using a spoon or brush, spread a generous amount of the garlic Parmesan butter mixture over each smashed potato.
- Bake for 30-40 minutes, or until the potatoes are golden brown and crispy on the edges. Serve immediately and enjoy!
Notes
For the crispiest results, use small, uniform potatoes. Do not over-smash; aim for about 1/2 inch thickness. Feel free to add fresh herbs like rosemary or thyme to the butter for extra flavor.
