Ingredients
- 2 pc boneless skinless chicken breasts (about 1 lb)
- 0.5 cup all-purpose flour
- 2 large eggs beaten
- 1 cup Panko breadcrumbs
- 0.5 tsp salt
- 0.25 tsp freshly ground black pepper
- 2 tbsp vegetable oil for frying
- 0.25 cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp grated fresh ginger
- 1 clove minced garlic
- 1 tsp Sriracha (optional for heat)
- 1 tbsp chopped green onion for garnish
Instructions
- Prepare Chicken: Pat chicken breasts very dry with paper towels. Season both sides with salt and pepper.
- Set Up Breading Station: Set up three shallow dishes. In the first, place the flour. In the second, beat the eggs. In the third, place the Panko breadcrumbs.
- Breading Chicken: Dredge each chicken breast in flour, shaking off excess. Dip in beaten egg, ensuring full coverage. Finally, coat thoroughly in Panko breadcrumbs, pressing gently to adhere.
- Pan-Fry Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully place chicken cutlets in the skillet, ensuring not to overcrowd. Cook for 4-5 minutes per side, until golden brown and cooked through. Cook the other side until crispy and fully cooked.
- Rest Chicken: Transfer cooked chicken to a wire rack set over a baking sheet to drain excess oil and keep crispy.
- Make the Dipping Sauce: Combine all the dipping sauce ingredients (soy sauce, rice vinegar, honey, ginger, garlic, and Sriracha if using) in a small bowl and stir well.
