Ingredients
- 8 ounces pasta (e.g. penne
- 2 tablespoons olive oil
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 28-ounce can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup Parmesan cheese grated
- 1/4 cup fresh basil chopped
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped onion and cook until softened and translucent, about 3-5 minutes.
- Add minced garlic and cook for another minute until fragrant, being careful not to burn it.
- Pour in the crushed tomatoes, season generously with salt and black pepper, and bring to a gentle simmer. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in the heavy cream and Parmesan cheese. Mix until well combined and heated through. Taste and adjust seasoning if necessary.
- Add the cooked and drained pasta to the sauce. Toss to coat evenly, adding a splash of reserved pasta water if the sauce is too thick or to achieve desired consistency.
- Serve immediately, garnished with fresh basil and extra grated Parmesan cheese.
Notes
Add grilled chicken or shrimp for extra protein. For a spicier kick, include red pepper flakes with the garlic. Fresh basil is a wonderful garnish. Leftovers can be stored in the refrigerator for up to 3 days.
