Ingredients
- 1 tbsp olive oil
- 2 boneless skinless chicken breasts cut into 1-inch cubes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cloves garlic minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese grated
- 8 oz fettuccine or pasta of choice
- 2 tbsp fresh parsley chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken cubes, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant, being careful not to burn it.
- Pour in chicken broth and heavy cream. Bring to a simmer, then reduce heat to low and cook for 5 minutes, stirring occasionally, until sauce thickens slightly.
- Stir in grated Parmesan cheese until melted and smooth.
- Return cooked chicken to the skillet. Add the drained pasta and toss to coat evenly in the creamy sauce.
- Serve immediately, garnished with fresh parsley.
Notes
For extra veggies, add spinach or broccoli florets during the last 5 minutes of cooking. You can also swap chicken for shrimp or skip meat for a vegetarian option. A sprinkle of fresh parsley or chives before serving adds a nice touch.
