- 2 tbsp olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 28 oz can crushed tomatoes
- 4 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1 tsp sugar optional
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant, being careful not to burn it.
- Pour in the crushed tomatoes and broth. Stir in sugar (if using), salt, and pepper. Bring the mixture to a simmer.
- Reduce heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld.
- Carefully use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a regular blender and blend until smooth (be cautious with hot liquids).
- Stir in the heavy cream and heat gently until warmed through. Do not boil after adding cream.
- Taste and adjust seasonings as needed. Serve hot, garnished with fresh basil.
