Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 28 oz can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp sugar optional
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  • Add minced garlic and cook for another minute until fragrant, being careful not to burn it.
  • Pour in the crushed tomatoes and broth. Stir in sugar (if using), salt, and pepper. Bring the mixture to a simmer.
  • Reduce heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld.
  • Carefully use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a regular blender and blend until smooth (be cautious with hot liquids).
  • Stir in the heavy cream and heat gently until warmed through. Do not boil after adding cream.
  • Taste and adjust seasonings as needed. Serve hot, garnished with fresh basil.

Notes

Serve with grilled cheese for the ultimate comfort meal. For a dairy-free version, use full-fat coconut milk or a plant-based cream alternative. Garnish with fresh basil or a dollop of sour cream.
