Ingredients
  

  • 1 tbsp olive oil
  • 4 medium boneless skinless chicken thighs
  • 1 large onion sliced
  • 2 medium apples such as Honeycrisp or Gala
  • 1 cup apple cider
  • 1/2 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups baby spinach optional
  • Fresh parsley for garnish chopped

Instructions
 

  • Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Add chicken pieces and sear until lightly browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  • Add sliced onion to the pot and cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.
  • Stir in sliced apples, apple cider, chicken broth, Dijon mustard, dried thyme, salt, and pepper. Bring to a simmer.
  • Return the seared chicken to the pot. Cover and simmer for 20-25 minutes, or until chicken is cooked through and tender.
  • If using, stir in baby spinach and cook until wilted, about 2-3 minutes.
  • Taste and adjust seasonings as needed. Garnish with fresh parsley before serving.

Notes

For a vegetarian option, use hearty root vegetables like sweet potatoes and parsnips instead of chicken. A touch of fresh thyme or rosemary can elevate the flavors. Serve with crusty bread or wild rice.
