Ingredients
- 1 tbsp olive oil
- 4 medium boneless skinless chicken thighs
- 1 large onion sliced
- 2 medium apples such as Honeycrisp or Gala
- 1 cup apple cider
- 1/2 cup chicken broth
- 1 tbsp Dijon mustard
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups baby spinach optional
- Fresh parsley for garnish chopped
Instructions
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Add chicken pieces and sear until lightly browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- Add sliced onion to the pot and cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.
- Stir in sliced apples, apple cider, chicken broth, Dijon mustard, dried thyme, salt, and pepper. Bring to a simmer.
- Return the seared chicken to the pot. Cover and simmer for 20-25 minutes, or until chicken is cooked through and tender.
- If using, stir in baby spinach and cook until wilted, about 2-3 minutes.
- Taste and adjust seasonings as needed. Garnish with fresh parsley before serving.
