Ingredients
- 8 oz linguine or spaghetti
- 1 lb shrimp peeled and deveined (fresh or frozen
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic minced
- 1/2 cup chicken or vegetable broth
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup Parmesan cheese grated (optional
- 1 tbsp sesame seeds for garnish
- 2 tbsp scallions chopped (for garnish)
Instructions
- Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
- While pasta cooks, heat butter and olive oil in a large skillet or pan over medium heat. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
- Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.
- Pour in the chicken or vegetable broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Season with salt and black pepper.
- Add the cooked and drained pasta to the skillet with the shrimp and sauce. Toss to combine, adding a splash of reserved pasta water if needed to create a glossy sauce.
- Remove from heat. If desired, stir in grated Parmesan cheese.
- Serve immediately, garnished with sesame seeds and fresh chopped scallions.
Notes
For an even faster meal, use pre-cooked shrimp; just add them at the end to warm through. A splash of dry white wine or lemon juice can add brightness to the sauce. Garnish with red pepper flakes for a touch of heat. Fresh parsley can also be added for extra color and flavor.
