Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 1/2 teaspoon salt
  • 8 each pork sausages
  • 2 tablespoons vegetable oil

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large bowl, whisk together the flour, milk, eggs, and salt until smooth. Let the batter rest for at least 15 minutes, or up to 30 minutes, for a lighter pudding.
  • Add the vegetable oil to a large oven-safe baking dish or cast-iron skillet. Place the sausages in the dish. Heat the dish with the oil and sausages in the preheated oven for 10-15 minutes, or until the sausages are lightly browned and the oil is very hot.
  • Carefully remove the hot dish from the oven. Pour the rested batter evenly over and around the hot sausages.
  • Return the dish to the oven and bake for 25-30 minutes, or until the Yorkshire pudding is golden brown, puffed up, and crispy. Avoid opening the oven door during the first 20 minutes of baking to ensure a good rise.
  • Serve immediately with onion gravy and your favorite side dishes.

Notes

For best results, ensure the oil in the pan is very hot before pouring in the batter. You can experiment with different types of sausages, like pork and apple or Cumberland, for varied flavors. Serve traditionally with rich onion gravy, mashed potatoes, and green vegetables.
