A comforting and incredibly popular baked potato loaded with tender seasoned chicken, rich Alfredo sauce, and gooey mozzarella cheese.
Ingredients
- 1 large baking potato scrubbed clean
- 0.5 cup cooked chicken chopped and seasoned
- 0.5 cup shredded mozzarella cheese
- 1 heavy pinch garlic powder
- 1 heavy pinch paprika
- 1 heavy pinch dried oregano
- 1 dash black pepper
- 2-3 tbsp Alfredo sauce
- 1 tsp olive oil
- 1 pinch salt
Instructions
- Preheat your oven to 400°F (200°C).
- Prick the potato several times with a fork. Rub it with olive oil and sprinkle lightly with salt.
- Bake the potato directly on the oven rack for approximately 1 hour, or until it is fork-tender.
- While the potato bakes, ensure your chicken is cooked, chopped, and seasoned. If starting with raw chicken, cook and season it separately.
- Once the potato is tender, carefully remove it from the oven. Slice it lengthwise down the middle, being careful not to cut all the way through, and fluff the inside with a fork.
- Spoon the Alfredo sauce into the potato, spreading it evenly.
- Add the seasoned chopped chicken, then top with shredded mozzarella cheese.
- Sprinkle generously with garlic powder, paprika, dried oregano, and black pepper. Add salt only if needed, to taste.
- Return the potato to the oven for another 5-10 minutes, or until the mozzarella is melted and bubbly.

Feel free to customize with your favorite seasonings for the chicken. For a vegetarian option, omit the chicken and add roasted vegetables or sautéed mushrooms.
