Ingredients
- 1 tbsp olive oil
- 6 large eggs scrambled
- 0.5 cup milk
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 can black beans rinsed and drained
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 8 medium flour tortillas
- 0.5 cup salsa optional
Instructions
- Heat olive oil in a non-stick pan over medium heat. Whisk eggs with milk, salt, and pepper. Pour into the pan and scramble until cooked through. Remove from heat.
- Warm black beans in a small saucepan or microwave.
- Lay out tortillas. Divide cooked rice, scrambled eggs, black beans, and shredded cheese evenly among them.
- Fold in the sides of each tortilla, then tightly roll from the bottom up to form a burrito.
- Wrap each burrito individually in foil or plastic wrap, then place in a freezer-safe bag or container. Freeze for up to 3 months.
- To reheat, unwrap from plastic (if used), then wrap in a damp paper towel. Microwave for 2-3 minutes, flipping halfway. Or, wrap in foil and bake at 350°F (175°C) for 15-20 minutes from frozen.
Notes
Customize with your favorite veggies like bell peppers, spinach, or corn. For a vegan option, omit cheese and eggs, and add more beans or a tofu scramble. Reheat in a microwave for 2-3 minutes or in an oven at 350°F (175°C) for 15-20 minutes, wrapped in foil.
