Ingredients
  

  • 2 slices crusty bread toasted
  • 1 can sardines in olive oil drained
  • 0.5 lemon juice and zest
  • 1 tbsp fresh parsley chopped
  • 1 pinch black pepper
  • 1 tsp extra virgin olive oil drizzle (optional)

Instructions
 

  • Toast your chosen bread slices until golden brown and slightly crispy.
  • Gently drain the olive oil from the canned sardines. In a small bowl, mash the sardines lightly with a fork.
  • Add the fresh lemon juice, lemon zest, chopped parsley, and black pepper to the mashed sardines. Mix thoroughly until well combined.
  • Evenly spread the sardine mixture over the toasted bread slices.
  • If desired, drizzle a tiny bit of extra virgin olive oil over the top before serving. Serve immediately as a quick snack or light lunch.

Notes

For an extra kick, add a pinch of red pepper flakes or a dash of hot sauce. Fresh dill or chives can also be a wonderful addition. Serve with a side of mixed greens for a more complete meal.
