  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1.25 cup milk
  • 1 large egg
  • 2 tbsp melted unsalted butter plus extra for griddle

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate medium bowl, whisk together the milk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
  • Heat a lightly oiled griddle or non-stick pan over medium heat. Pour about 1/4 cup of batter per pancake onto the hot griddle.
  • Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles appear on the surface and edges look set.
  • Serve immediately with your favorite toppings.
