Ingredients

  • large roll Banana leaves cleaned and wilted
  • abundant portion Steamed white rice warm
  • 1 kg Grilled Liempo (Pork Belly) sliced
  • 500 g Grilled Shrimp marinated
  • 1 whole Grilled Fish (e.g. Tilapia)
  • 1 batch Chicken Adobo with sauce
  • 1 batch Lumpia Shanghai fried
  • 6 large Salted Eggs sliced
  • 4 medium Tomatoes sliced
  • 2 large Mangoes ripe
  • 1 medium Pineapple sliced
  • 1 cup Spiced Vinegar for dipping
  • 1 cup Calamansi Soy Sauce for dipping

Instructions

  • 1. Prepare Your Feast: Cook all your desired Filipino dishes beforehand. Popular choices include grilled meats (pork belly, chicken skewers), grilled fish, various seafood (shrimp, mussels), chicken or pork adobo, fried lumpia, and an abundance of steamed white rice.
  • 2. Lay the Foundation: Thoroughly clean large banana leaves. Briefly wilt them over a flame or by pouring hot water to make them pliable. Line your table or designated eating area with these leaves, ensuring good coverage.
  • 3. Create the Rice Spine: Spoon generous portions of warm steamed white rice down the center of the banana leaf-lined table, forming a continuous 'spine' for the feast.
  • 4. Arrange the Delights: Artfully arrange all the cooked dishes around and on top of the rice. Place grilled items, saucy dishes, fried goods, and fresh elements like sliced tomatoes, salted eggs, and fruits (mangoes, pineapples) visually appealingly.
  • 5. Add Dipping Sauces: Place small bowls of various dipping sauces, such as spiced vinegar and calamansi-soy sauce, at strategic points along the feast for easy access.
  • 6. Gather and Enjoy: Invite everyone to gather around the table. Before eating, ensure hands are thoroughly washed. Encourage guests to scoop food directly from the banana leaves and eat traditionally with their bare hands (kamayan). Embrace the communal spirit and joyous experience of a boodle fight!

Notes

The essence of a boodle fight is the shared experience. Prioritize preparing a diverse array of Filipino favorites like grilled meats (liempo, skewers), seafood (grilled fish, shrimp), adobo, lumpia, and a generous amount of steamed rice. Don't forget fresh accompaniments like sliced tomatoes, salted eggs, and tropical fruits (mangoes, pineapples). Encourage guests to wash their hands thoroughly before and during the meal, and truly embrace the traditional 'kamayan' (eating with hands) style. Adjust dishes to your preferences and dietary needs. Calories are a rough estimate for a generous single serving in a large feast.
