Ingredients
- 4 cups fresh corn kernels from about 6-8 ears
- 4 cups whole milk
- 1/2 cup granulated sugar or piloncillo to taste
- 1 tsp vanilla extract optional
- 1 pinch salt
- 1/2 cup water
Instructions
- Combine corn kernels, 2 cups of milk, and water in a blender. Blend until very smooth.
- Strain the corn mixture through a fine-mesh sieve into a large saucepan, pressing down on the solids to extract as much liquid as possible. Discard the solids.
- Add the remaining 2 cups of milk, sugar (or piloncillo), and cinnamon sticks to the saucepan with the strained corn liquid.
- Heat the mixture over medium heat, stirring constantly, until it begins to thicken. This usually takes about 15-20 minutes. Do not boil vigorously.
- Once thickened to your desired consistency, remove from heat. Stir in the vanilla extract, if using, and the pinch of salt.
- Remove cinnamon sticks before serving. Pour into mugs and serve warm. Enjoy your authentic Atole de Elote!
Notes
For an even smoother atole, strain the corn mixture twice. Adjust sugar to your preference. Piloncillo, a Mexican brown sugar cone, can be used for a deeper molasses-like flavor. Serve immediately for the best experience. This atole can be reheated gently on the stovetop.
