Ingredients
  

  • 2 medium jalapeños stemmed and roughly chopped (seeds removed for less heat)
  • 1 cup fresh cilantro packed
  • 2 cloves garlic minced
  • 0.25 cup lime juice freshly squeezed
  • 0.5 cup Greek yogurt plain
  • 0.25 cup olive oil extra virgin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper freshly ground
  • 1 tablespoon aji amarillo paste optional

Instructions
 

  • Combine chopped jalapeños, cilantro, minced garlic, lime juice, Greek yogurt, olive oil, salt, and black pepper in a blender or food processor. If using, add aji amarillo paste.
  • Blend on high speed until completely smooth and creamy. Scrape down the sides as needed to ensure all ingredients are incorporated.
  • Taste the sauce and adjust seasonings if necessary. Add more salt, lime juice, or a pinch of sugar if desired. For extra heat, you can leave some jalapeño seeds in.
  • Transfer the Aji Verde to an airtight container. Refrigerate for at least 30 minutes before serving to allow flavors to meld and deepen.

Notes

For a milder sauce, remove all seeds and membranes from the jalapeños. For an authentic touch, add 1 tablespoon of aji amarillo paste. Aji Verde can be stored in an airtight container in the refrigerator for up to 5 days. It's excellent with grilled chicken, roasted potatoes, or as a dip for plantain chips.
