  • 2 medium ají peppers stemmed
  • 1/4 cup water
  • 2 tbsp olive oil or vegetable oil
  • 2 cloves garlic peeled
  • 1/2 cup fresh cilantro packed
  • 1/2 tsp salt or to taste

Instructions
 

  • Roughly chop the ají peppers and garlic.
  • Combine ají peppers, water, oil, garlic, cilantro, and salt in a blender or food processor.
  • Blend until the sauce is smooth and well combined. If too thick, add a tiny bit more water until desired consistency.
  • Taste and adjust salt if necessary.
  • Serve immediately or chill for flavors to meld.

Notes

For a milder sauce, remove seeds and membranes from the ají peppers. You can also add a squeeze of fresh lime juice or a small piece of white onion for extra flavor. Serve immediately or store in an airtight container in the refrigerator for up to 5 days. Great with grilled chicken, empanadas, or as a dip for plantain chips.
