Ingredients
- 2 medium ají peppers stemmed
- 1/4 cup water
- 2 tbsp olive oil or vegetable oil
- 2 cloves garlic peeled
- 1/2 cup fresh cilantro packed
- 1/2 tsp salt or to taste
Instructions
- Roughly chop the ají peppers and garlic.
- Combine ají peppers, water, oil, garlic, cilantro, and salt in a blender or food processor.
- Blend until the sauce is smooth and well combined. If too thick, add a tiny bit more water until desired consistency.
- Taste and adjust salt if necessary.

Notes
For a milder sauce, remove seeds and membranes from the ají peppers. You can also add a squeeze of fresh lime juice or a small piece of white onion for extra flavor.
