Ingredients
  

  • 2 ea corn on the cob fresh or frozen
  • 2 tbsp unsalted butter melted
  • 1 tbsp Mexican seasoning blend adjust to taste

Instructions
 

  • Carefully cut each corn cob lengthwise into quarters or eighths to create 'ribs'.
  • In a small bowl, combine the melted unsalted butter and Mexican seasoning blend.
  • Brush the corn ribs generously with the butter and seasoning mixture, ensuring all sides are coated.
  • Place the seasoned corn ribs in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
  • Air fry at 180°C (350°F) for 10-12 minutes, flipping halfway through, until the corn is tender and lightly charred.

Notes

Serve with a squeeze of lime, cotija cheese, crema, or spicy aioli. Great with grilled meats or as part of a taco night. For extra spice, add a pinch of chili powder to the seasoning blend.
