Ingredients
- 2 lbs "bone-in skin-on chicken thighs"
- 4 cloves garlic minced
- 1 tsp garam masala
- 2 tbsp soy sauce low sodium
- 1 tbsp lime juice freshly squeezed
- 0.5 tsp white pepper
- 0.5 tsp black pepper freshly ground
- 3 tbsp gochujang Korean chili paste
- 2 tbsp honey
- 1 tsp sesame oil optional
- 1 tbsp water optional
- sesame seeds toasted
- green onions sliced
Instructions
- Prepare Chicken: Pat chicken thighs dry with paper towels. In a large bowl, combine minced garlic, garam masala, soy sauce, lime juice, white pepper, and black pepper. Add chicken thighs and toss to coat evenly. Marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
- Air Fry Chicken: Preheat your air fryer to 375°F (190°C). Arrange chicken thighs in a single layer in the air fryer basket, skin-side up, ensuring not to overcrowd. You may need to cook in batches. Air fry for 20-25 minutes, flipping halfway through, until the skin is crispy and the internal temperature reaches 165°F (74°C) at the thickest part.
- Make Hot Honey Gochujang Sauce: While the chicken is cooking, in a small saucepan, combine gochujang, honey, and sesame oil (if using). Heat over medium-low heat, stirring constantly, until the sauce is smooth and slightly warmed through. If the sauce is too thick, add 1 tablespoon of water to thin it to your desired consistency.
- Toss and Serve: Once the chicken is cooked, transfer it to a large bowl. Pour the hot honey gochujang sauce over the chicken and toss gently to coat each piece evenly. Garnish with toasted sesame seeds and sliced green onions.
