Ingredients
- 1 lb boneless skinless chicken thighs
- 2 tbsp soy sauce
- 1 tbsp sake (or dry sherry)
- 1 tbsp mirin
- 1 tsp grated ginger
- 1 clove grated garlic
- 0.5 tsp sugar
- 0.25 tsp black pepper
- 0.5 cup potato starch (or cornstarch)
- 1 tbsp vegetable oil (for misting)
Instructions
- In a medium bowl, combine the chicken pieces with soy sauce, sake, mirin, grated ginger, grated garlic, sugar, and black pepper. Mix well to coat all chicken pieces. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
- Once marinated, drain any excess liquid from the chicken. Add the potato starch to the bowl and toss until the chicken pieces are thoroughly coated. Ensure there are no dry spots.
- Preheat your air fryer to 375°F (190°C). Arrange the chicken pieces in a single layer in the air fryer basket, ensuring not to overcrowd it. Cook in batches if necessary.
- Air fry for 12-15 minutes, flipping the chicken halfway through, until golden brown and cooked through. If desired, lightly mist with vegetable oil before flipping for extra crispness.
- Serve immediately with a lemon wedge or Japanese mayonnaise on the side.
Notes
For extra crispiness, you can lightly mist the chicken with oil before air frying. Serve with a squeeze of lemon or a side of Japanese mayonnaise. Marinating longer, up to 4 hours, will enhance the flavor.
