This version of pebre, a Chilean condiment, combines bell peppers, tomatoes, parsley and cilantro for a fresh bite.
Ingredients
- 1 pound mini bell peppers seeded and diced
- 2 large tomatoes diced
- 1 cup chopped fresh cilantro
- 1 cup chopped fresh parsley
- ½ large onion diced
- 4 cloves garlic minced
- ¼ cup extra-virgin olive oil
- 2 tablespoons red-wine vinegar
- ¾ teaspoon salt
- ¼ teaspoon ground pepper
- Tortilla chips for serving
Instructions
- Combine peppers, tomatoes, cilantro, parsley, onion, garlic, oil, vinegar, salt and pepper in a medium bowl. Serve with chips, if desired.
