Mastering Water Kefir & Kefir Soda
A refreshing, probiotic-rich fermented drink made from water kefir grains, organic cane sugar, filtered water, and optional fruit for a delicious fizzy second ferment.
Ingredients
- 7 cups filtered water
- 0.5 cup organic cane sugar
- 0.25 cup active water kefir grains
- 0.5 cup fruit juice or chopped fruit (for second ferment)
Instructions
- In a large clean glass jar, combine filtered water and organic cane sugar. Stir until the sugar is completely dissolved.
- Add the active water kefir grains, and optionally, a dried fig and a lemon slice for extra minerals.
- Cover the jar with a breathable cloth and secure with a rubber band. Place in a warm spot (68-78°F / 20-25°C) out of direct sunlight for 24-48 hours. Taste periodically; it should be less sweet and slightly tangy.
- Once fermented to your liking, strain the liquid into another clean jar or bottle, separating the water kefir grains. The grains are now ready for a new batch.
- To the strained water kefir, add your desired flavoring (e.g., 1/2 cup fruit juice or 1/4 cup chopped fruit per quart).
- Seal the jar or flip-top bottle tightly. Allow to ferment at room temperature for another 12-48 hours for carbonation. 'Burp' bottles daily to release excess pressure.
- Once desired fizziness is achieved, strain out any fruit pieces if necessary and refrigerate immediately to halt fermentation. Enjoy chilled!
Notes
Always use filtered or spring water; chlorine can harm kefir grains. Avoid metal utensils with the grains. Adjust fermentation times based on room temperature and desired sweetness/tanginess. For active carbonation in the second ferment, use airtight flip-top bottles and 'burp' them daily. Store finished kefir soda in the refrigerator to slow down fermentation.
