Ingredients
- 1 tbsp olive oil
- 1 cup onion chopped
- 2 cloves garlic minced
- 2 stalks celery chopped
- 2 carrots diced
- 1 cup red lentils rinsed
- 6 cups vegetable broth
- 1 can diced tomatoes 14.5 oz
- 1 tsp cumin
- 0.5 tsp turmeric
- 0.25 tsp black pepper
- 0.5 tsp salt or to taste
- 2 tbsp fresh parsley chopped
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, garlic, celery, and carrots. Cook until softened, about 5-7 minutes.
- Stir in the rinsed lentils, vegetable broth, diced tomatoes, cumin, turmeric, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender and soup has thickened. Stir occasionally to prevent sticking.
- Taste and adjust seasoning if necessary.
- Ladle into bowls and garnish with fresh chopped parsley. Serve hot.
Notes
For a vegetarian option, omit the chicken broth and use vegetable broth. Add a squeeze of lemon juice before serving for a brighter flavor. Serve with crusty bread.
