Ingredients
- 1 cup frozen mango chunks
- 1 medium ripe banana frozen
- 0.5 cup unsweetened coconut milk
- 1 tablespoon honey or maple syrup optional
- 1 tablespoon shredded coconut for topping
- 1 tablespoon granola for topping
- 0.25 cup fresh berries for topping
Instructions
- Combine frozen mango chunks, frozen banana, and unsweetened coconut milk in a high-speed blender.
- Blend until smooth and creamy, adding a splash more coconut milk if needed to reach desired consistency. If desired, add honey or maple syrup and blend briefly.
- Pour the smoothie into a bowl. Top with shredded coconut, granola, and fresh berries.
- Serve immediately, or prepare for batch freezing by pouring into airtight containers and freezing for up to 1 month. Thaw slightly before serving.
Notes
For a thicker bowl, add less coconut milk. You can adjust sweetness with honey, maple syrup, or a pitted Medjool date. For extra protein, blend in a scoop of your favorite protein powder.
