Ingredients
  

  • 1 cup frozen mango chunks
  • 1 medium ripe banana frozen
  • 0.5 cup unsweetened coconut milk
  • 1 tablespoon honey or maple syrup optional
  • 1 tablespoon shredded coconut for topping
  • 1 tablespoon granola for topping
  • 0.25 cup fresh berries for topping

Instructions
 

  • Combine frozen mango chunks, frozen banana, and unsweetened coconut milk in a high-speed blender.
  • Blend until smooth and creamy, adding a splash more coconut milk if needed to reach desired consistency. If desired, add honey or maple syrup and blend briefly.
  • Pour the smoothie into a bowl. Top with shredded coconut, granola, and fresh berries.
  • Serve immediately, or prepare for batch freezing by pouring into airtight containers and freezing for up to 1 month. Thaw slightly before serving.

Notes

For a thicker bowl, add less coconut milk. You can adjust sweetness with honey, maple syrup, or a pitted Medjool date. For extra protein, blend in a scoop of your favorite protein powder. To freeze for later, pour blended smoothie into airtight containers or freezer-safe bags. Thaw slightly in the fridge overnight or on the counter for 30-60 minutes before serving. Top with your favorite additions like chia seeds, flax seeds, granola, fresh fruit, or a drizzle of nut butter.
