Ingredients
- 1 lb pasta any shape
- 2 tbsp olive oil extra virgin
- 4 cloves garlic minced
- 1 can (28 oz) crushed tomatoes good quality
- 0.5 cup fresh basil chopped
- 0.25 tsp red pepper flakes optional
- 0.5 tsp salt or to taste
- 0.25 tsp black pepper freshly ground
- 0.5 cup Parmesan cheese grated
Instructions
- Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Pour in the crushed tomatoes, salt, and black pepper. Bring to a simmer, then reduce heat to low, cover, and let it cook for 15-20 minutes, stirring occasionally, allowing the flavors to meld.
- Stir in the chopped fresh basil. Add the drained pasta to the sauce, tossing to coat evenly. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
- Stir in the grated Parmesan cheese. Serve immediately, garnished with extra fresh basil and Parmesan cheese.
Notes
For extra depth, roast cherry tomatoes with a drizzle of olive oil before adding them to the sauce. A pinch of sugar can balance the acidity of the tomatoes. Serve with a sprinkle of red pepper flakes for a subtle kick. Freshly grated Parmesan cheese is a must for serving!
