Ingredients
- 4 cup water filtered
- 0.5 cup apple cider vinegar with the mother
- 0.25 cup blackstrap molasses
- 2 inch fresh ginger peeled and thinly sliced
- 0.25 cup fresh mint leaves loosely packed
- 1 tbsp lemon juice freshly squeezed (optional)
Instructions
- In a medium saucepan, combine the filtered water, thinly sliced fresh ginger, and fresh mint leaves. Bring to a gentle simmer over medium heat.
- Reduce heat to low and let it simmer for 10-15 minutes to infuse the flavors. Remove from heat and let it cool completely.
- Once cooled, strain the mixture through a fine-mesh sieve into a pitcher, discarding the solids.
- Add the apple cider vinegar, blackstrap molasses, and optional fresh lemon juice to the infused liquid. Stir well until the molasses is fully dissolved.
- Taste and adjust sweetness if desired. Cover the pitcher and refrigerate for at least 1 hour before serving to chill thoroughly.
- Serve cold, over ice, optionally garnished with extra mint leaves or a lemon slice.
Notes
Adjust sweetness to taste. For a spicier kick, use more fresh ginger. This switchel can be stored in the refrigerator for up to 5 days. Serve chilled, optionally garnished with fresh mint or a lemon slice. Great post-workout or as a daily wellness tonic.
