Ingredients
- 4 cup water
- 1/2 cup dashi powder or 4 cups dashi broth
- 4 tbsp miso paste white or red
- 4 oz firm tofu cut into 1/2-inch cubes
- 2 tbsp dried wakame seaweed rehydrated
- 2 stalks green onions thinly sliced
Instructions
- In a medium pot, bring water to a gentle boil. If using dashi powder, add it to the boiling water and stir until dissolved. Reduce heat to low.
- In a small bowl, scoop a ladleful of the dashi broth and whisk it with the miso paste until smooth. This prevents the miso from clumping.
- Add the rehydrated wakame seaweed and tofu cubes to the pot. Let simmer for 2-3 minutes, ensuring not to boil the soup once miso is added.
- Remove the pot from the heat. Stir in the dissolved miso paste mixture.
- Ladle the miso soup into bowls and garnish with sliced green onions before serving.
Notes
For a richer flavor, use dashi made from scratch. You can customize with other vegetables like sliced mushrooms or spinach. Serve immediately for best taste. Do not boil the soup after adding miso, as high heat can diminish its flavor and beneficial probiotics.
