Ingredients
  

  • 400 g pasta any shape like fettuccine or spaghetti
  • 2 tbsp olive oil extra virgin
  • 4 cloves garlic minced
  • 1.5 cups heavy cream full-fat
  • 0.5 cup Parmesan cheese freshly grated
  • 0.25 cup pasta water reserved from cooking
  • 0.5 tsp black pepper freshly ground
  • 0.25 tsp salt or to taste
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Cook pasta according to package directions until al dente. Reserve about ½ cup of pasta water before draining.
  • While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  • Pour in the heavy cream and bring to a gentle simmer. Cook for 3-5 minutes, stirring occasionally, until the sauce slightly thickens.
  • Remove the skillet from heat and stir in the grated Parmesan cheese, black pepper, and salt. Mix until the cheese is melted and the sauce is smooth. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  • Add the drained pasta to the skillet with the sauce. Toss well to coat all the pasta evenly.
  • Serve immediately, garnished with extra Parmesan cheese and fresh chopped parsley.

Notes

For extra protein, add cooked chicken breast or shrimp. A pinch of red pepper flakes can add a subtle kick. Garnish with fresh parsley or basil for added freshness.
