Ingredients
  

  • 8 oz pasta any short shape
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 0.5 cup vegetable broth
  • 0.25 cup fresh basil chopped
  • 0.25 cup Parmesan cheese grated

Instructions
 

  • Cook pasta according to package directions until al dente. Drain and set aside.
  • While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  • Stir in the undrained diced tomatoes and vegetable broth. Bring to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
  • Add the cooked and drained pasta to the skillet with the sauce. Toss to coat evenly.
  • Stir in the chopped fresh basil and grated Parmesan cheese. Season with salt and black pepper to taste.
  • Serve immediately, garnished with extra Parmesan cheese and fresh basil if desired.

Notes

For added protein, consider adding cooked chicken, sausage, or chickpeas. A sprinkle of red pepper flakes can add a nice kick. Freshly grated Parmesan cheese is highly recommended for serving. You can use any short pasta shape like penne, fusilli, or farfalle.
