Ingredients
  

  • 1/4 cup water kefir grains
  • 2 cups organic cane sugar for 1 gallon of water
  • 1 gallon filtered non-chlorinated water
  • 1/4 teaspoon sea salt

Instructions
 

  • Warm a small amount of filtered water to dissolve the organic cane sugar completely. Ensure no sugar crystals remain.
  • Pour the dissolved sugar water into a clean gallon-sized glass jar.
  • Add the remaining filtered non-chlorinated water to the jar, ensuring the entire mixture is at room temperature (68-75°F or 20-24°C).
  • Gently add the water kefir grains and the sea salt to the jar, stirring lightly with a non-metal spoon.
  • Cover the jar opening with a breathable cloth, such as cheesecloth or a coffee filter, and secure it tightly with a rubber band.
  • Place the jar in a warm spot away from direct sunlight, and allow it to ferment for 24-48 hours. The longer it ferments, the more tart and less sweet it will become.
  • After desired fermentation, strain the liquid into clean bottles using a non-metal strainer, separating the water kefir grains. The grains are now ready for your next batch!
  • Seal the bottles and refrigerate the finished electrolyte drink. It is best enjoyed chilled.

Notes

For best results, use non-chlorinated, filtered water. Avoid using metal utensils or containers as they can harm the delicate kefir grains. Adjust the amount of sugar to your preference; less sugar will result in a less sweet, tangier drink. For a second fermentation, add fruit slices (like lemon, ginger, or berries) to sealed bottles and ferment for another 12-24 hours for extra flavor and fizz.
