Ingredients
  

  • 1 liter first fermented water kefir
  • 0.25 cup fruit juice or sliced fruit for flavoring
  • 1 unit airtight bottle swing-top preferred

Instructions
 

  • 1. Prepare your first fermented water kefir, ensuring your grains are active and healthy.
  • 2. Strain out the kefir grains and transfer the plain kefir to a clean, airtight bottle, leaving about an inch of headspace.
  • 3. Add your desired flavorings (e.g., fruit juice, sliced fruit, herbs) to the bottle.
  • 4. Ensure the bottle is sealed tightly to prevent any air leakage during the second fermentation. Double-check any gaskets or seals.
  • 5. Allow the bottle to ferment at room temperature for 12-48 hours, depending on desired fizziness and room temperature.
  • 6. "Burp" the bottle occasionally (every 12-24 hours) by opening and quickly re-sealing to release excess pressure and prevent explosions, while still maintaining carbonation.
  • 7. Once desired fizziness is achieved, refrigerate the kefir soda to slow down fermentation and enjoy cold.

Notes

Always use strong, healthy kefir grains for the initial fermentation to ensure a robust starter for your second fermentation. Experiment with different flavorings like fruit juices, fresh ginger, or herbs to find your perfect bubbly blend.
