Ingredients
  

  • 1.5 lb boneless skinless chicken thighs or breasts
  • 1 cup chicken broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp cornflour
  • 2 tbsp water

Instructions
 

  • Pat chicken dry and season with salt, pepper, paprika, and thyme.
  • Place chopped onion and minced garlic at the bottom of the slow cooker. Add chicken on top.
  • Pour in the chicken broth.
  • Cook on low for 5-6 hours or on high for 2.5-3 hours, until the chicken is very tender and easily shredded.
  • Remove chicken from the slow cooker and shred it using two forks. Set aside.
  • In a small bowl, whisk together cornflour with a splash of water to form a smooth slurry.
  • Stir the cornflour slurry into the liquid remaining in the slow cooker. Cook on high for another 15-20 minutes, stirring occasionally, until the sauce has thickened.
  • Return shredded chicken to the slow cooker and stir to coat in the thickened sauce.
  • Serve warm.

Notes

Serve this tender chicken with mashed potatoes, rice, or a side of steamed vegetables. For extra flavor, consider adding a bay leaf or a sprig of fresh rosemary to the slow cooker. Leftovers make great sandwich fillings or additions to salads.
