Ingredients
  

  • 1.5 lb boneless skinless chicken thighs
  • 2 tbsp olive oil divided
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 head broccoli cut into florets
  • 1 cup carrots sliced
  • 1 cup bell peppers any color
  • 0.5 unit red onion thinly sliced
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  • In a large bowl, toss chicken pieces with 1 tablespoon of olive oil, oregano, garlic powder, paprika, salt, and pepper until well coated.
  • Spread the seasoned chicken in a single layer on one half of the prepared baking sheet.
  • In the same bowl, toss broccoli, carrots, bell peppers, and red onion with the remaining 1 tablespoon of olive oil, salt, and pepper.
  • Arrange the seasoned vegetables in a single layer on the other half of the baking sheet.
  • Roast for 25-30 minutes, or until chicken is cooked through and vegetables are tender-crisp. Flip vegetables halfway through cooking for even browning.
  • Remove from oven. Drizzle with fresh lemon juice and garnish with chopped fresh parsley before serving.

Notes

Feel free to swap chicken with firm tofu or pork loin. For extra crispiness, broil for the last 2-3 minutes. Serve with a side of quinoa or rice if desired.
