Ingredients
- 1 cup soy sauce low sodium preferred
- 0.5 cup mirin
- 0.25 cup sake or dry sherry or chicken broth
- 0.5 cup honey
- 2 tablespoons brown sugar packed
- 1 teaspoon ginger grated fresh
- 2 cloves garlic minced
- 1 tablespoon cornstarch
- 2 tablespoons water cold
Instructions
- In a medium saucepan, combine the soy sauce, mirin, sake (or substitute), honey, brown sugar, grated ginger, and minced garlic. Whisk well to combine.
- Bring the mixture to a simmer over medium heat, stirring occasionally, until the brown sugar is fully dissolved. Do not boil vigorously.
- In a small bowl, whisk together the cornstarch and cold water to create a slurry. Make sure there are no lumps.
- Slowly pour the cornstarch slurry into the simmering sauce, whisking constantly. Continue to cook and whisk for 1-2 minutes, or until the sauce thickens to your desired consistency.
- Remove the sauce from heat and let it cool slightly before using. It will continue to thicken as it cools.
Notes
This sauce can be stored in an airtight container in the refrigerator for up to 2 weeks. For a gluten-free version, use tamari instead of soy sauce. Adjust honey to your sweetness preference. Great for chicken, salmon, beef, or tofu.
