Ingredients
- 1 cup quinoa uncooked
- 2 cups vegetable broth or water
- 1 can (15-ounce) black beans rinsed and drained
- 1 cup frozen corn thawed
- 1 medium red bell pepper diced
- 1/2 medium red onion finely chopped
- 1/4 cup fresh cilantro chopped
- 1 large avocado diced
- 2 tablespoons olive oil for dressing
- 2 tablespoons lime juice freshly squeezed
- 1/2 teaspoon cumin ground
- 1/4 teaspoon salt to taste
- 1/8 teaspoon black pepper to taste
Instructions
- Rinse quinoa thoroughly under cold water. In a medium saucepan, combine quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all liquid is absorbed and quinoa is fluffy. Fluff with a fork and set aside.
- While quinoa cooks, prepare the dressing. In a small bowl, whisk together olive oil, lime juice, ground cumin, salt, and black pepper.
- In a large bowl, combine the rinsed black beans, thawed corn, diced red bell pepper, finely chopped red onion, chopped cilantro, and diced avocado.
- Add the cooked quinoa to the vegetable and bean mixture. Pour the lime dressing over everything and toss gently to combine.
- Serve immediately, or refrigerate for later. Enjoy!
