Ingredients
- 1.5 lb salmon fillets skin removed and cut into 1-inch cubes
- 2 tbsp soy sauce low sodium
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 clove garlic minced
- 0.5 tsp ginger grated
- 1 tbsp olive oil for cooking
- 1 tbsp sesame seeds for garnish (optional)
- 2 tbsp green onions sliced for garnish (optional)
Instructions
- In a medium bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger to create the marinade.
- Add the salmon cubes to the marinade, toss gently to coat, and cover the bowl. Refrigerate for at least 30 minutes, or up to 2 hours. Reserve about 2 tablespoons of the marinade for later use.
- Heat olive oil in a large non-stick pan or skillet over medium-high heat.
- Once hot, add the marinated salmon bites (without crowding the pan; cook in batches if necessary) and cook for 2-3 minutes per side, until golden brown and cooked through and flakes easily.
- Remove the cooked salmon from the pan and set aside.
- Add the reserved marinade to the pan and cook on low heat for 2-3 minutes, stirring constantly, until it slightly thickens into a sauce. Bring to a rolling boil for at least 1 minute to ensure food safety.
- Return the salmon bites to the pan, toss gently with the sauce, or drizzle the sauce over the salmon when serving. Garnish with sesame seeds and green onions if desired.
Notes
For best results, marinate salmon for at least 30 minutes, or up to 2 hours. Do not overcrowd the pan while cooking; cook in batches if necessary. Serve with rice, quinoa, or a fresh green salad.
