Ingredients
- 1 cup quinoa rinsed
- 2 cups vegetable broth
- 1 can (15 oz) black beans rinsed and drained
- 1 cup corn fresh or frozen
- 1 medium bell pepper diced (any color)
- 1/2 medium red onion diced
- 2 tsp taco seasoning
- 1/4 cup salsa for serving
- 1 large avocado diced
- 1/4 cup fresh cilantro chopped
- 1 lime cut into wedges for serving
Instructions
- In a large skillet or pot with a lid, combine the rinsed quinoa, vegetable broth, black beans, corn, bell pepper, red onion, and taco seasoning. Stir gently to combine.
- Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the quinoa has absorbed all the liquid and is fluffy.
- Remove the skillet from heat and let it sit, covered, for 5 minutes. Then, fluff the quinoa with a fork.
- Divide the quinoa mixture into serving bowls. Top each bowl with a spoonful of salsa, diced avocado, fresh cilantro, and a lime wedge.
