A quick and flavorful salmon dish served with sweet corn sautéed in garlic butter. Perfect for a healthy weeknight meal.
Ingredients
- 2 fillets salmon skin-on or off
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 cups corn fresh or frozen
- 2 tablespoons butter unsalted
- 2 cloves garlic minced
- 1 tablespoon fresh parsley chopped (for garnish)
Instructions
- Pat salmon fillets dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil in a large non-stick skillet over medium-high heat. Once hot, add salmon fillets, skin-side down if applicable.
- Cook salmon for 4-5 minutes per side, depending on thickness, until cooked through and flaky. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add corn to the skillet and cook for 5-7 minutes, stirring occasionally, until tender and slightly caramelized. Season with a pinch of salt and pepper.
- Serve the pan-seared salmon immediately with the garlic butter corn. Garnish with fresh parsley.
Notes
For an extra kick, add a pinch of chili flakes to the corn. Serve with a side of roasted asparagus or a simple green salad. Any seasonal green vegetable can be swapped for corn.
