Ingredients
  

  • 1.5 cups self-rising flour plus extra for dusting
  • 1 cup plain Greek yogurt full-fat or low-fat
  • 1/2 tsp salt optional
  • 1 tbsp olive oil for brushing (optional)

Instructions
 

  • In a large bowl, combine the self-rising flour and salt (if using). Add the Greek yogurt and mix with a spoon until a shaggy dough forms.
  • Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic. If the dough is too sticky, add a little more flour, one tablespoon at a time.
  • Divide the dough into 4-6 equal pieces. Roll each piece into a ball.
  • On a lightly floured surface, roll each ball into a thin, round disc, about 6-7 inches in diameter and 1/8 inch thick. Don't roll them too thick, or they won't puff up properly.
  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  • Place one or two pita discs (depending on your air fryer size, do not overcrowd) into the preheated air fryer basket. You can lightly brush them with olive oil for extra flavor and color, though it's optional.
  • Cook for 4-5 minutes, flipping halfway through. The pita should puff up and have light golden-brown spots.
  • Remove the cooked pita from the air fryer and cover it with a clean kitchen towel to keep it warm and soft while you cook the remaining pitas.
  • Serve warm with your favorite dips or fillings.

Notes

For best results, don't overcrowd your air fryer basket. Ensure the dough is rolled thin enough for the pita to puff. If you don't have self-rising flour, combine 1 cup all-purpose flour with 1.5 teaspoons baking powder and 1/4 teaspoon salt. Serve warm with hummus, tzatziki, or as a wrap.
