A delicious and easy chicken dinner featuring a homemade sweet and spicy mustard glaze, enhanced with an herby seasoning mix and fresh herbs. Perfect for a juicy and flavorful weeknight meal.
Ingredients
- 4 chicken breasts boneless skinless
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper optional
- 1 tbsp fresh rosemary finely chopped
- 1 tbsp fresh thyme finely chopped
- 2 tbsp olive oil
- salt to taste
- black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, smoked paprika, garlic powder, and cayenne pepper (if using). Stir in fresh rosemary and thyme.
- Pat chicken breasts dry with paper towels. Season generously with salt and black pepper.
- Place chicken in the prepared baking dish. Brush the mustard mixture evenly over both sides of the chicken.
- Bake for 20-25 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- For extra browning, you can broil for the last 2-3 minutes, watching carefully to prevent burning.
- Remove from oven, let rest for 5 minutes before slicing and serving.
Notes
This versatile sweet and spicy mustard glaze can also be used as a salad dressing or a marinade for other proteins. For extra crispiness, broil for the last few minutes. Serve with roasted vegetables or rice for a complete meal.
